Ingredients
1/2 cup Fresh grated Parmesan cheese
1/2 cup Chopped fresh parsley
1/2 cup Chopped, toasted almonds
1 tsp Dried basil
2 lbs. Sole fillets
3 tbsp Lemon juice
3 tbsp Melted butter
Preparation
Mix together cheese, parsley, almonds, and basil. Spoon some filling on end of each fillet, then roll it up. Place fish in butter baking pan. Pour lemon juice and butter over fish and sprinkle remaining filling over top.
Bake, uncovered at 375 degrees for 30 minutes until the fish flakes.
