Peel eggplant (if desired) and cut into 1" cubes. Heat oil in dutch oven, fry eggplant and onion until golden brown. Add tomato sauce, tomatoes, and seasonings. Simmer 45 minutes. Add cottage cheese and bread crumbs. Place in casserole dish and sprinkle with Parmesan cheese.
Bake at 350 degrees for 30 minutes.
