Eggplant Bake

This cheesy eggplant dish makes a great side.

Ingredients

1 1/2 lbs. Eggplant

2 tbsp Oil

1 Large onion, chopped

16 oz. Can tomato sauce

16 oz. Can tomatoes, chopped in large pieces

1/8 tsp. Pepper

1/2 tsp. Oregano

1 pint Cottage cheese

1/2 cup Bread crumbs

2 tbsp Parmesan cheese

Preparation

Peel eggplant (if desired) and cut into 1" cubes. Heat oil in dutch oven, fry eggplant and onion until golden brown. Add tomato sauce, tomatoes, and seasonings. Simmer 45 minutes. Add cottage cheese and bread crumbs. Place in casserole dish and sprinkle with Parmesan cheese.


Bake at 350 degrees for 30 minutes.

Cook's Notes

Good served with garlic bread.

Can be refrigerated before baking.
