Ingredients
3 Eggs
3 Green onions (including tops), thinly sliced
1 cup Half and half
1 clove Garlic, minced or pressed
2 cups (8 oz) shredded Swiss or Jack cheese
1 cup Chopped fresh broccoli flowerets and tender stems
Salt and Pepper
2 cans (6 1/2 oz each) chunk-style tuna or 1 can (15 1/2 oz)salmon, drained and flaked
1 (9-inch) pie shell, baked until barely golden brown
Preparation
In a large bowl, beat eggs, onions, half and half, and garlic until blended. Mix in cheese and broccoli; season to taste with salt and pepper.
Arrange tuna in a layer in pie shell, mounding it slightly in center. Spoon egg mixture over tuna.
Bake pie on bottom rack of a 350 degree oven until filling is puffed and lightly browned (about 50 minutes). Let stand for 5-10 minutes, then cut int wedges to serve. Makes 6 servings.
