4 6-oz Pieces skinless halibut fillets
Kosher salt
Black pepper
12 sprigs Fresh thyme
1 Thinly sliced small orange
Preparation
Place each fillet on a 12-15" piece of parchment paper, keeping the fish to one side; season each with 1/2 teaspoon salt and 1/4 teaspoon pepper. Top each with 3 thyme sprigs and couple slices of orange. Fold the parchment over the fish, then seal each packet by making small overlapping folds along the edges. Bake on 2 baking sheets at 400 for 12 minutes. Cut the packets open and serve.
