Garden Vegetable Soup

Realy great soup very low cal. (1 serving has 0 Weight Watcher points)

Ingredients

2/3 cup Sliced carrot
1/2 cup Diced onion
2 Garlic cloves minced (I use dry)
3 cups Fat free broth (beef, chicken, or vegetable)
1 1/2 cups Diced green cabbage
1/2 cup Green beans
1 tbsp Tomato paste
1/2 tsp Dried basil
1/4 tsp Dried oregano
1/4 tsp Salt
1/2 cup Diced zucchini

Preparation

1. In large saucepan, sprayed with nonstick cooking spray, saute the carrot, onion, and garlic over low heat until softened, about 5 min.

2. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt; bring to a boil. Lower heat and simmer covered, about 15 minutes or until beans are tender.

3. Stir in zucchini and heat 3-4 minutes. serve hot.

I make this WW soup with a few modifications. I first cook the onion half way, then add the garlic. Onions take longer to cook than garlic. I also use about 10 cloves of garlic instead of the skimpy 2.

SOUNDS LIKE THIS IS A GREAT SOUP. LOW IN CALORIES I NEED TO LOSE WEIGHT, SOUNDS LIKE A GOOD START. COULD ADD A LITTLE MEAT FOR FLAVOR, STILL BE LOW IN CALORIES. GIVE IT A TRY
