Ingredients

1 Large egg, hard-cooked

1 Egg white, hard-cooked

1/4 cup Fat-free mayonnaise

Chopped celery

Red onion

1 Dash curry powder

2 slices Reduced calorie whole-wheat bread

Romaine lettuce leaves

Plum tomato slices

Dried basil

Balsamic vinegar

1 Orange

Preparation

Chop egg and egg white; add mayonnaise, celery, onion, and a dash curry powder.

Spread on 1 slice bread; top with romaine lettuce leaves, plum tomato slices, and another bread slice.


Side with more plum tomatoes, sprinkled with dried basil and balsamic vinegar and an orange.
