Key Lime Pie

An Irresistible Creamy Concoction

Ingredients

3 Egg yolks

1/4 cup Sugar

1/2 cup Lime juice

1 can Sweetened condensed milk

Graham cracker pie shell, baked

Optional topping:

4 Egg whites

6 Tbls. sugar

1/2 tsp. Cream of tartar.

Preparation

Combine yolks, sugar and lime juice in a stainless steel bowl. Mix with a wire whisk. Place bowl over a saucepan of boiling water and whisk constantly until thickened. Remove bowl and mix in the condensed milk. Pour into baked graham cracker pie shell.


Optional topping: Beat four egg whites; blend in 6 tbls. sugar and ���½ tsp. cream of tartar. Beat until stiff and peaks form. Cover filling with topping and bake in 350-degree oven until egg whites are golden brown

Though almost everyone who's ever had a slice of it comes back for more, not many people really know anything about this Florida dessert. For instance, did you know that key limes are actually not native to the Florida Keys? They originated on the Yucatan Peninsula and were transplanted here. Key limes are not green, they're yellow -- and so key lime pie is yellow unless food coloring has been added to it
