Bok Choy Salad with Asian Dressing

Ingredients

1 Head Bok Choy
1 bunch Scallions
2 (i use one) pkg Ramon instant oriental noodles (throw flavor pack away)
2 oz Sliced almonds
2 tbsp Olive oil
Garlic powder and salt to taste
1/4 cup Rice vinegar
1/2 cup Sugar
Optional: Protein

Preparation

Chop bok choy into 1 inch pieces, add scallions, place in bowl and refrigerate. Break up ramon noodles into bite size chunks (i put noodles in a zip lock and use a rolling pin). Saute noodles, sesame seeds, and almond in oil about 5 minutes or until browned. Add garlic powder and salt. Cool and store in a covered container. In a small saucepan, whisk together soy sauce, vinegar and sugar. Boil for 1 minutes. (I add a little oil to this) Combine all parts of salad and toss with chicken pieces.
