Sweet Potato Souffle

This is an all time family favorite for many years. For those sweet potato lovers in your house...be prepared to make this sweet treat often! LOVE IT!

Ingredients

1 Large can sweet potatoes (drained)

1/2 c. Sugar

2 Well beaten eggs

1/2 c. Milk

1/2 tsp. Salt

1/2 stick Margarine

1 tsp. Vanilla

TOPPING:

Mix together the following after sweet potatoes are done and set aside for now.

1 c. Brown sugar (loose packed)

1/3 c. Flour

1/3 c. Melted margarine

1 c. Walnuts (or pecans or almond slivers)

Preparation

Mash potatoes well with mixer. Blend together the next 6 ingredients; mix together well. Might be slightly runny and/or lumpy.


Pour into 8x11 dish. (It bakes GREAT in a stone casserole dish if you have one).


Spread on TOPPING.


Bake uncovered at 350 degrees for 35 minutes. Check it to make sure the topping doesn't burn.

Cook's Notes

If you're a "from scratch" gourmet type cook, just use sweet potatoes from your favorite store (instead of the cheater canned kind), then peel, cut them into small pieces, and boil until tender. I usually use about 6 sweet taters when I do it like this. But use you're judgement! ENJOY!
