My kids love this and it's very easy to make on busy weekday nights

Ingredients

1 lb. Lean ground chicken
1 tbsp. Oil
1 pkg (14 oz.) Macaroni & Cheese Dinner
2-1/2 cups Hot water
1 jar (16 oz.) Salsa
1 tsp. Ground cumin
1 can (19 oz.) drained and rinsed beans (black or pinto)
2 Chopped green onions
1/2 cup Sour Cream

Preparation

1.Cook chicken in oil in large non-stick skillet 5-7 minutes or until cooked through. Add pasta (reserving cheese pouch), water, salsa, and cumin to skillet; bring to a boil.

2. Reduce heat; cover, and simmer 10 minutes. Stir beans and cheese pouch into skillet; heat thouroughly. Top with green onions. Serve with sour cream on the side, if desired.

I honestly thought I had all the ingredients when I pulled out our ground turkey this morning! Little did I know that the babysitter had used the last TWO boxes of mac n cheese. We improvised with 2 cups of elbow mac and 12 oz of velveeta. It tasted great! Easy kid friendly food! (Stephanie, I don't know what you were expecting from a meal that includes a box of Mac n Cheese).

My kids loved this. Very easy to make and it is now a frequently requested dinner at our house. (I tried to give it a 5-star but the stars won't save on my review.)

this dish was pretty good. it really depends on the kind of salsa and mac and cheese you use. we used pace picante mild salsa, and velveeta mac and cheese, as well as black beans. it made a TON of food, so i had leftovers a couple of times...i enjoyed eating it with some tortilla chips.

was better after garlic salt, jalepenos and served on totilla chips or saltines

This was a decent tasting dish. My greedy family of four wasn't able to polish it all off though, this recipe makes a lot.

Good one skillet meal. Makes a lot; cut recipe in half next time if cooking for just 2 people. Next time will use mild instead of medium salsa, and also won't use as cheap a brand of mac'n'cheese - bigger noodles would be good. Used ground turkey instead of chicken. 1/22/08
