Kraz (Spinach and Cheese Egg Dish)

This yummy dish is easy to make and can be used in many ways - a side dish, a breakfast dish, or the main course!

Ingredients

2 (10 oz. ) packages chopped frozen spinach
6 Eggs
2 pints Cottage cheese
1/2 lb. Grated cheddar cheese
1 cube Butter (melted)
5 tbs Flour

Preparation

Cook and drain spinach according to package directions. Mix butter and flour. Mix eggs in bowl and add cottage cheese, butter mixture, grated cheese, and cooked spinach. Pour in baking dish and cook at 350 for 1 hour or until the center comes clean when you insert a toothpick.

Cook's Notes

For a more hearty dish, you can add some chopped deli ham.

What do you do to the butter/flour mixture after you mix them together?

Why not use egg substitute or egg whites only, low fat cottage cheese, lower fat cheddar and, instead of butter use a lower fat margarine, soy butter, or a butter that is blended with another, safer oil. I did the above using egg beaters and Moove over butter and the dish was excellent. I served it to company and everyone raved.

A healthy recipe should have less than 1/3 of its calories in fat (and no saturated fat). This dish sounds great, but with 252 fat calories it would not be one that I would try.

I'll bet if you simply use low fat cottage and cheddar cheeses and replace the butter (I like fleischman's olive oil spread) that the fat content would drop significantly.

I agree. Recipe sounds delicious but 28 g of fat and over 900 mg of sodium is not a healthy option.

The recipe sounds tasty - but 28 grams of fat?! I look to the site to provide me with healthy recipes but too many don't make the mark. (Nothing against the contributors. Meals Matter personel should do a better job of editing submissions or providing recipe makeovers.)
