Ingredients
1 Large Onion, thinly sliced
2 cloves Garlic, Minced
3 tbs Oil (Peanut or Sesame preferred)
1 cup Water
3 tbs Soy sauce
1 tbs Bouillon
1 Heavy tbs Light Molasses
2 tbs Peanut Butter
1/4 tsp Cardamon
1/8 tsp Nutmeg
1/4 cup Raisins
1/4 cup Cashew pieces, lightly toasted
1 lb. Tofu
2 Medium bananas
Preparation
Saute onion & garlic in oil for about 3 minutes.
Add all but the last two ingredients and stir until well blended. Then add tofu and bananas, simmer for 5 minutes stirring frequently.
Cook's Notes
Good with millet or rice, but obviously could be served over noodles- especially rice noodles.
