Cheesy Veggie soup

Easy prep, a little bit of spicy, cheesy soup. 1 cup = 1 point

Ingredients

16 oz Package Velveeta 2%
2 bags California blend frozen vegetables
1 can Rotel
3 cans Low sodium chicken broth

Preparation

Simmer veggies and rotel in chicken broth approximately 45 min. Remove from heat and add cubed velveeta. Return to heat, stirring frequently, until melted (this will not take long!)

Cook's Notes

Goes good with crusty bread and is easy to set aside and save for lunches.
