Chicken with Oranges and Avocados

Delicious grilled chicken with a beautiful and tasty garnish

Ingredients

1 cup Lowfat yogurt

1/4 cup Minced red onion

2 tbsp Chopped cilantro

1 tbsp Honey

Salt

Ground black pepper

4 Boneless, skinless chicken breasts - 4-6 oz each

Garnish:

1 Avocado

1/4 cup Fresh lime juice

2 Oranges, peeled and sectioned

1 Small red onion, thinly sliced

Preparation

Mix all the ingredients except the chicken in a large bowl. Add the chicken to the mixture and coat evenly. Cover the bowl and refrigerate for 30 minutes.

Preheat the grill or broiler.

Remove the chicken from the marinade and discard the marinade. Sprinkle the chicken with salt and pepper.

Place the chicken on the grill or under the broiler and cook until the juices run clear.


While chicken is cooking, peel, core and chop the avocado and toss it with the lime juice quickly so that it doesn't discolor. Add the oranges, onion and cilantro.


Season with salt and serve on top of the chicken.

Cook's Notes

Remember to discard the marinade to protect against cross-contamination. Citrus containing recipe.

This meal was great! I can't have any dairy so I used coconut milk instead of cow's milk. Worked great. I was a little apprehensive about the flavor of the garnish but we really liked it. I even used the extra as salsa. Thanks!

I'm on WW, too, but I still make room in my diet for avacados. The health benefits more than make up for the high (healthy) fat. And you need some fat in your diet to utilize fat-soluble vitamins. I'd just eat a half serving of the garnish, to cut down on total calories.

This sounds like a wonderful recipe, but at 8 Weight Watchers points it would use up almost half of my daily points for just one salad. I am assuming that the 366 calories listed are for one serving.
