Baked Red Snapper with Tomato & Orange

Serve this saucy dish with steamed rice or crusty French Bread.

Ingredients

4 Plum tomatoes, chopped
1/4 cup Finely chopped onion
1/4 cup Orange juice
3 tbsp. Dry white wine
2 Large garlic cloves, minced
1 tsp. Grated orange peel
12 ounces (2 small or 1 large) 3/4 inch thick red snapper fillet
1 tsp Olive oil

Preparation

1. Preheat oven to 400 degrees.

2. Combine first 6 ingredients in 9-inch square baking dish. Bake 15 minutes.

3. Top hot tomato mixture with snapper. Brush snapper with oil. Season with salt and pepper.

4. Cover and bake until fish is just cooked through, approximately 20 minutes.

Cook's Notes

Try halibut for a variation. Add tabasco sauce for a more Creole taste. If in a rush, use already prepared salsa!
