| 4 | Plum tomatoes, chopped |
| 1/4 cup | Finely chopped onion |
| 1/4 cup | Orange juice |
| 3 tbsp. | Dry white wine |
| 2 | Large garlic cloves, minced |
| 1 tsp. | Grated orange peel |
| 12 ounces | (2 small or 1 large) 3/4 inch thick red snapper fillet |
| 1 tsp | Olive oil |
1. Preheat oven to 400 degrees.
2. Combine first 6 ingredients in 9-inch square baking dish. Bake 15 minutes.
3. Top hot tomato mixture with snapper. Brush snapper with oil. Season with salt and pepper.
4. Cover and bake until fish is just cooked through, approximately 20 minutes.
Try halibut for a variation. Add tabasco sauce for a more Creole taste. If in a rush, use already prepared salsa!
