Spaghetti Noodles with A 3 Cheese Sauce instead of Tomato Sauce

Ingredients
1 Brick of Romano Cheese
1/2 Container of Ricotta Cheese
1/3 Brick of Parmesan Cheese
1/2 package Spaghetti Noodles
1 tbsp Olive Oil
1/2 cup Butter or Alternative
1 tsp Salt
Preparation
Add Olive Oil & Salt to water before Boiling. Boil Spaghetti noodles until al dente. While Spaghetti is boiling, prepare cheese:
Scoop Ricotta cheese onto several white paper towels. Squeeze out as much moisture as possible. Ricotta cheese should be dry enough to crumble apart. Finely Grate Romano & Parmesan cheeses. Mix together all 3 cheeses, crumbling Ricotta into mixture.
When noodles are done, drain, add butter, cheeses and mix well. Can be made with meatballs-my favorite is the veggie kind.
Cook's Notes
Be sure to really dry the Ricotta well and to crumble it very finely. If it isn't dry enough the cheeses don't melt right and you get a bunch of cheese "mud".
