Mummy's Yummy Egg Casserole

This colorful egg casserole is good for breakfast, brunch, or lunch (with salad and herb bread). It can fit into both traditional and vegetarian diets simply by manipulating the optional items...Over the years, I've tried it with many other vegetable combinations, such as broccoli/swiss cheese; aspargus/black olive/jalapeno jack cheese; green chiles/cheddar; spinach/feta/dill...also, I've used chicken and even smoked salmon in some of the endless variations with and without vegetables. However, my tried and true favorite is below.

Ingredients

1 quart Drained nonfat cottage cheese
1/2 cup Grated sharp cheddar cheese
6 t. Flour
6 Eggs
opt: 1/3 cup Finely diced turkey ham
opt: 1/3 cup Finely diced green bell pepper
opt: 1/3 cup Finely diced red bell pepper

Preparation

1. In a baggie, toss flour and cheese together until cheese is well coated.

2. Stir cottage cheese, cheese, and eggs together. Add optional items.

3. Pour into a 9" x 13" glass baking dish sprayed with 'Pam.'

4. Bake at 350 for 30-35 minutes.

5. Cool 5 minutes. Cut into squares and serve.
