This is just as easy as the 2-Minute Chicken Salad Pita, and has celery, onion, and pine nuts added for crunch. It is full of muscle-building protein and clean enough to munch in any phase of your diet.

Directions

1. In a large bowl, mix together the celery, onion, pine nuts, mustard, sour cream, yogurt, and pepper. 2. Add the chicken and toss with the veggie mixture so you don't break it apart too much. 3. Spread half the chicken salad on a slice of bread. Add a lettuce leaf and top with another bread slice. Repeat with the remaining ingredients to make a second sandwich. Recipe Tips

According to the ESHA Nutrient Database, which follows stringent protocols for nutrient information, you can easily reduce the overall sodium content in canned meats like tuna, salmon, and chicken by as much as 30 percent just by draining the liquid from the can. I take it a step further--not just draining the liquid but always double-rinsing canned meats with water for good measure.
