This is a carrot dish with a crispy, sweet "cobbler" topping. It goes well with a milder dish and a salad.

Ingredients
4-5 c Steamed (or otherwise cooked) carrots
1/3 c Unbleached white flour
1 c Organic whole rolled oats (*NOT* quick cooking - but, they don't have to be organic)
1/2 c Packed brown sugar
1/4 c Margerine at room temperature, or 1/4 C olive oil
Cooking spray
Preparation
Preheat the oven to 350 deg. (F)
Coat a medium-sized casserole dish or 8"x8" pan lightly with cooking spray.
In a bowl, combine the flour, oats, sugar, and oil, and blend with a fork until crumbly.
Dump the carrots into the casserole dish, and top with the flour mixture. Make sure the topping covers the carrots completely.
Bake for 30-40 minutes, or until the topping is crispy.
Cook's Notes
I like this recipe because it's quick to prepare, I can use up leftover carrots, and it's sweet without being bad for you.
You can also add in 1/2 of a chopped onion, a pinch of thyme, and a pinch of ground black pepper, and decrease the brown sugar to 1/4 C to make a more savory cobbler topping.
