Chicken-Grape Salad Croissants

This is one of my favorite sandwiches. The sweet and salty contrast between the grapes and chicken is divine!

Ingredients

4 Croissant rolls
1 cup Cooked chicken, chopped
1 cup Seedless red grapes
1/4 cup Mayonnaise
1 tbsp Fresh lemon juice
Salt and pepper, to taste
Chopped walnuts or pecans, optional

Preparation

In medium bowl, mix all ingredients, except croissants. Refrigerate until cold.

When ready to serve:

Cut croissants in half, lengthwise.

Spoon mixture onto bottom half of each croissant. Top with other halves. Serve.
