Ingredients

1 lb + 2oz large shrimp
1 1/2 tsp Cajun seasoning
2 tsp Olive oil
1/2 c Orange juice
1/4 c Apricot preserves
2 c Hot cooked rice
Chopped green onions

Preparation

Combine shrimp and seasoning toss to coat, set aside

Heat oil in large skillet over medium heat, add shrimp saute 3-4 min, remove shrimp from pan, keep warm.

Add orange juice and preserves to pan. Cook 4 min until sauce is slightly think. Add shrimp back to pan toss to coat. Serve shrimp over rice, top with green onions

1/2c rice & 3/4c shrimp
