Ingredients
1/4 cup Light mayonnaise
1/4 cup Fat-free plain yogurt
2 teaspoons Dijon mustard
2 teaspoons Dried parsley
8 oz Egg noodles (6cups uncooked)
1 1/2 cups Chopped red bell pepper
2 teaspoons Chopped garlic
1 pound Skinless, boneless chicken breasts, cut into bite size pieces
Preparation
1. Mix mayonnaise, yogurt, mustard, and parsley to make the sauce. Set aside.
2. Meanwhile, cook noodles according to package directions, omitting oil and salt. Drain.
3. Spray a large skillet with nonstick cooking spray and stir-fry pepper, garlic, and chicken until done. add sauce and noodles and cook on low until heated throughout.
