Easy and Quick salad. Very adaptable to your liking.

Ingredients

1 lb Ground beef
1 pkg Taco seasoning
1/2 bag Corn chips or tortilla chips
1/2-1 can Tomato sauce
1/2-1 can Kidney beans (drain and rinse)
1/2-1 can Black beans (drain and rinse)
1 bag Salad mix
1 can Sliced black olives
4 Roma tomatoes
1 cup Shredded cheddar cheese

Preparation

1. Brown meat , add taco seasoning, if the meat is fat, drain off some/all the grease before seasoning.

2. Mix in tomato sauce, red beans, black beans. Let it cook for a bit, just to heat the beans. Shut it off and let it cool to a warm.

3. Toss salad with shredded chedder cheese sliced black olives and corn chips.

4. Pour the meat, tomato, & bean mixture over the salad and toss again.

..OR build a salad.. it's a one time thing... the salad gets soggy and mushy if you don't eat it all in one sitting. but if you build it on a plate, you can reheat the meat and build it again the next day or even two... or use the left overs for tacos!

Cook's Notes

This is a very good protein filled vegetarian dish if you leave the meat out. Can easily substitute beans and/or meat to your liking. The measurements are not specific to this dish, so feel free to adjust. I would say it feeds 4-6.
