Canadian Bacon, Spinach and Mushroom Crustless Quiche

Ingredients

2 tsp Olive oil
1 Onion, finely chopped
2 slices Canadian bacon, diced
1 (8oz) pkg Sliced fresh mushrooms
2 Large eggs
2 Large egg whites
1/2 cup Fat-free milk
1 cup Fat-free ricotta
1/2 tsp Dried thyme
1/2 tsp Salt
1/2 tsp Black pepper
1 (10oz) pkg Frozen chopped spinach, thawed & squeezed dry

Preparation

1. Preheat oven to 375. Spray 9in glass pie plate with nonstick spray.

2. Heat oil in large nonstick skillet over medium-high heat. Add the onion, stir occasionally until softened (5min). Add bacon & mushrooms, stir occasionally until mushrooms are softened & most of the liquid has evaporated (5min).

3. Whisk eggs, egg whites, milk, ricotta, thyme, salt & pepper in large bowl until well blended.

4. Stir in onion mixture & spinach.

5. Pour into prepared pie plate. Bake until top is golden & knife in center comes out clean (35-40min). Let stand 10min before slicing.

Cook's Notes

I prefer freshly cooked (wilted) spinach to the frozen - better flavor & you don't have to deal with squeezing all the water out to be sure the dish isn't runny like you do with frozen!
