Potato Sloppy Joe Bake

Great for weeknights.

Ingredients

1 lb Ground beef

1 15 1/2 oz Can sloppy joe sauce

1 10 3/4 oz Can condensed cream of potato soup, undiluted

1 32 oz Package frozen cubed hash brown potatoes, thawed

1 cup Shredded cheddar cheese

Preparation

In a skillet, cook beef over medium heat until no longer pink; drain. Add sloppy joe sauce and soup. Place hash browns in a greased 13 in x 9 in x 2 in baking dish. Top with beef mixture. Cover and bake at 450 for 20 minutes. Uncover; bake 10 minutes longer or until heated through. Sprinkle with cheese.

I was so excited to make this recipe because it was so simple. I give it 5 stars for the simplicity of the recipe, but it seems to be missing something for our family... It seemed like a lot of potato and a lot less of everything else. We will try it again but maybe substitue shreaded potatoes and add a can of mexicorn maybe for something a little... more.
