Pecan Chicken

I got this recipe from Weight Watchers more than 12 years ago. It's easy and very, very good.

Ingredients

4 Boneless, skinless chicken breasts

1/2 cup Prepared calorie-reduced Italian salad dressing

1/2 cup Fresh bread crumbs

1/2 cup Crushed pecans

1/4 cup (1/2 stick) margarine

Preparation

1. Place chicken in plastic bag or shallow bowl. Pour dressing over chicken and seal bag or cover bowl with plastic wrap. Marinate in refregerator for 1 to 8 hours.


2. Drain and discard marinade. Place bread crumbs and pecans in shallow dish. Dip chicken in bread crumb mixture and press gently to coat.


3. Melt margarine in large skillet on medium heat. Cook chicken 5 to 6 minutes on each side or until thoroughly cooked.


4. Or, use oven method. Heat oven to 375 degrees. Place marinated chicken in shallow baking dish. Melt margarine and drizzle over chicken. Bake 20 to 30 minutes or until thoroughly cooked.
