Chicken Salad with grape and nuts

Great summer dish for lunch brunch or dinner. Good on crackers, bread or alone on a bed of lettuce.

Ingredients

3 Chicken breasts
3/4 cup Mayo
3/4 cup Grapes cut in half
1/2 cup Walnut or pecan pieces
2 Ribs celery, loosely diced
Salt
Pepper
Rolls

Preparation

1. Add chicken breasts in water. Season with salt, peper, garlic powder, parsley and other preferred herbs. Poach for 15 minutes until breasts are fully cooked.

2. Let chicken cool and cut into cubes.

3. In a bowl, combine chicken, mayo, grapes, nuts, celery and salt and pepper.

4. Refridgerate salad for at leat 1 hour.

5. Serve on crackers, rolls or on a bed of lettuce.
