Mediterranean Bean Soup

A great vegetarian soup to warm up a chilly day.

Ingredients

4 cups Water

2 tbsp Tomato paste

2 (14.5 oz)can Navy beans, drained

1 (16 oz) bag Frozen vegetables (potato, celery, carrot, and onion mix)

2 tbsp Olive oil

2 tbsp Lemon juice

2 tsp Spice Island's Mediteranean Seasoning Mix

Preparation

Put water and tomato past in 4-quart pot. Add beans, vegetables, oil and lemon juice. Stir well. Bring to boil. Reduce heat adn simmer covered, 30 minutes. During last 5 minutes of simmering, stir in Mediterranean Seasoning.
