Prawns: Peel & De-vein. Marinate, 2-3 hours, in olive oil, minced garlic, salt and pepper. Squeeze half of lemmon juice over mixture.
Citrus: Peel & segment. Clean, core & shave the fennel bulb. Place in ice water for 5-10 minutes.
While shrimp is coking, being careful not to overcook, gently toss greens, fennel, citrus and dressing. Place cooked shrimp around plate and serve.
