Citrus Fennel Salad with Grilled Prawns

This fresh salad is a tasty change from boring iceburg lettuce.

Ingredients

12 Large prawns

1 Ruby grapefruit

1 Navel orange

1 Blood orange

1 Fennel bulb

1/4 lb Mixed greens

2 oz Favorite vinaigrette

3 tbsp Olive oil

2 cloves Fresh-minced garlic

1 Lemon

Preparation

Prawns: Peel & De-vein. Marinate, 2-3 hours, in olive oil, minced garlic, salt and pepper. Squeeze half of lemmon juice over mixture.


Citrus: Peel & segment. Clean, core & shave the fennel bulb. Place in ice water for 5-10 minutes.


While shrimp is coking, being careful not to overcook, gently toss greens, fennel, citrus and dressing. Place cooked shrimp around plate and serve.
