Teriyaki Beef Soup

This tasty Asian inspired teriaki beef soup easily works into a healthy-eating plan. It provides more than half of your daily vitamin C and vitamin A requirements, and has only 6 grams of total fat per serving.

Ingredients

8 oz. Boneless beef sirloin steak
2 tsp Olive oil
1 Large shallot, thinly sliced
4 cups Water
1 cup Apple juice
2 Carrots, cut into thin bite-size strips
1/3 cup Uncooked long-grain rice
1 tbsp Grated fresh ginger
3 cloves Garlic, minced
1 tsp Instant beef bouillon granules
2 cups Small broccoli flowerets
1 tbsp Dry sherry (optional)
Slivered green onion tops (optional)

Preparation

Trim fat from meat. Cut meat into thin, bite-size strips. In a large saucepan, heat olive oil over medium-high heat. Add meat and shallot. Cook and stir for 2 to 3 minutes or until meat is brown.

Use a slotted spoon to remove meat mixture, set aside.

In the same saucepan, combine water, apple juice, arrots, rice, ginger, garlic and bouillon granules. Bring to boiling; reduce heat. Simmer, covered, for 3 minutes more. Stir in the teriyaki sauce, and if desired, the sherry. Ladle soup into bowls.

Garnish with slivered green onion tops, if desired.

we left out the brocolli and had to add a bit of salt. not sure if i will make it again.

It is definitely a homemade Teriyaki sauce. And Delilahz is correct in that the rice should be cooked first. Cooking it in with the T-sauce would definitely not be good eats. The cook time for the sauce is three minutes, not the rice. Other than some slightly poorly worded directions, this makes for an excellent soup!

It's a homemade Teriyaki sauce. Looks like to me anyway. It's the apple juice and seasonings I think. Probably the rice should be cooked first. I would think anyway. Sounds reasonable.

How much "teriyaki"? I dont see it in the list of ingredients....
