Ingredients

4 Medium potatos, sliced 1/4 inch thick and microwaved 8-10 minutes until tender
1 lb. Boneless/skinless chicken breasts cut into 1/2 inch strips
2 cloves Garlic
2 tbsp. Olive oil
2 tsp. Dried rosemary, crumbled

Preparation

While potatos cook, in a large skillet toss and brown chicken and garlic in oil over light heat -- 5 minutes. Add potatoes and rosemary; saute and toss until potatoes are lightly browned. Season with salt and pepper.

Tasted great. I also added onion after reading comments, but I think next time I will cook potatoes separately. Just seemed too crowded and they weren't as crisp as I had hoped for...

Very good...I added onion, garlic and I didn't have Rosemary so I substituted dried thyme. I also deglazed the pan with a little white wine and water after sauteing the onions and garlic....very tasty!

A good base recipe. Very mild regarding spices (good for those families who cannot have spicy foods). Would be very easy to add anything you like (mushrooms, other spices, etc) to make this dish unique for your own family's tastes.

Additional Suggestions: This recipe BEGS for lots of onion. Also, it may be better to microwave the potatoes whole. I found they didn't microwave very well when they were sliced. Brown chicken, then remove from pan. Add sliced, baked potatoes to fresh oil to brown, then combine all cooked ingredients. Also, salt and pepper chicken and potatoes before browning. The flavors seem to blend better. When I did all these things, my kids loved it (but still felt it needed more onion!).
