Pasta with Tomato-Basil Sauce

This is a light alternative to heavy-sauce pasta. Great for a summer dish.

Ingredients

1 cup Basil (freshly chopped)
6 Plum tomatoes, seeded, chopped (or 3 large sliced tomatoes)
3-4 Garlic cloves, crushed
1/4 cup Olive oil, extra virgin
Salt and pepper to taste
8 oz Dry pasta (Angel Hair or Rigatoni)

Preparation

1. Boil pasta noodles until soft.

2. Heat olive oil, tomatoes and garlic until tomatoes are soft (appx. 3-5 minutes). Add basil; heat about 3 minutes. Serve over Angel Hair or Rigatoni pasta.

Cook's Notes

Some ideas to add to the sauce for a variety of flavor: feta cheese, cooked chicken, onion (red or white). Serve with garlic bread.

let me just tell you how to make this Italian-style. Roma tomatoes make lovely purees, which are canned to make sauces in winter. But if the tomatoes are fresh - cherry and grape tomatoes are preferred. While the pasta is cooking, cut some small tomatoes in half, add to a hot pan with warm olive oil, and stir for two minutes. Add some boiling water from the pasta, and then about a cup of pecorino cheese. You will be tempted to use a different cheese. Don't. Take my word for it, use the pecorino. Stir until the cheese is mostly melted, add the fresh basil, then add the piping hot pasta and stir - all in the pan - the way it's done in Italy, and believe me, it makes a difference.

i like spaghetti noodles, as opposed to angel hair. just a thought.=)
