Ingredients
2 Medium size eggplants
2 tbsp Sugar
2 tbsp Oil
8 Fresh garlic "crumbs"
6 tbsp Mayonnaise
Preparation
Place washed eggplants directly on your stove top flame, side by side.
Turn them carefully every 4 minutes, but dont poke them.
when they shrink and become softer, set aside.
Peel skin off.
Remove seeds as much as possible.
Mash with a fork.
Add sugar, oil, salt, garlic and mayonnaise, mix well.
Serve at the opening of the Shabbos meal, decorated with sprinkle of paprika and a few persley leaves.
