1/3 cup Toasted wheat germ (no sugar added)
1/3 cup Nonfat dry milk
1/2 tsp Baking powder
1/2 cup Chopped walnuts
4 Egg whites
1/2 cup Packed brown sugar
1 tsp Vanilla
Preparation
Preheat oven to 350 degrees. Coat an 8-inch-square baking dish with nonstick spray and set aside. In a microwaveable dish, melt the chocolate chips and butter at 85% power. Blend well and set aside.
In a small bowl, combine the oats, wheat germ, dry milk, baking powder and walnuts.
In a large bowl, beat the egg whites with the brown sugar and vanilla until slightly thick. Stir in the chocolate mixture and then the oat mixture. Blend well, but do not overmix. Spread the batter into the prepared baking dish. Bake for 20-35 minutes, or until the edges are firm and the top is crispy. Cool completely before cutting, or refrigerate overnight before serving.
