A delicious make-ahead brunch dish. Make it lower fat by using low-fat sausage and egg substitute.

Ingredients
1 Loaf thin-sliced, firm white bread
2 lbs Sausage
6 Green onions, minced
1 jar Pimentos, chopped
1/4 lb Mushrooms, sliced
Salt
Pepper
1/2 tsp. Dry mustard
6 Eggs
3 c. Milk
1 tsp. Worchestershire sauce
1/2 c. Grated cheddar cheese
Preparation
Brown and drain sausage; sautee mushrooms. Mix with green onions, pimento, salt, pepper and dry mustard. In a bowl, mix eggs, milk and Worchestershire sauce. Spray oil a 9x13" pan. Cover bottom with a layer of bread slices. Spoon sausage mix over. Top with remaining bread. Pour egg and milk mix over. (Can be assembled to this point and refrigerated overnight.)
Bake at 350 for 70 minutes. Sprinkle with grated cheese and put back in the oven til cheese is melted.
