Quick Spanish Rice

Make it into a main dish by adding ground beef or chicken and you have dinner in a flash!

Ingredients

14 1/2 oz Can original style stewed
Tomatoes
1 1/2 cups Chicken broth
1 1/4 cups Uncooked white rice
1 tbsp Butter
2 tsp Chili powder
3/4 tsp Oregano
1/2 tsp Garlic powder

Preparation

Combine all ingredients in saucepan. Bring to a boil, reduce heat. Cover and simmer for about 25 minutes or until rice is tender.

Cook's Notes

Reduce the sodium in this recipe by using low-sodium chicken broth.

To make a main dish:
Add 1 lb ground beef, cooked and drained or 2 chicken breast, cooked and shredded.
Place all ingredients in greased casserole dish and top with grated cheese.
Bake at 350 degrees oven for about 20-25 minutes.

very good! hint - i used a potato masher to break up the stewed tomatoes.
