Blueberry Snack Cake

This quick dessert is yummy and very easy to make. You can freeze blueberries when they are in season so you can enjoy this summery cake all year round.

Ingredients

2 cups All-purpose flour
1-1/2 cups Sugar
1/2 cup Cold butter or margarine
1 tsp Baking powder
1 cup Milk
2 Eggs, separated
2 cups Fresh or frozen blueberries*

Preparation

In a mixing bowl, combine flour and sugar. Cut in butter until crumbly. Set aside 3/4 cup of mixture for topping. Add the baking powder, milk, and egg yolks to remaining mixture; mix well. Beat egg whites until soft peaks form; fold into batter.


Pour into a greased 13x9x2 inch baking dish. Sprinkle with blueberries and reserved crumb mixture. Bake at 350 for 30-35 minutes or until golden brown and a toothpick inserted near the center comes out clean. Yield: 15-18 servings.

Cook's Notes

*If using frozen blueberries, do not thaw before adding to the batter

This recipe looks wonderful except the large amount of sugar. Could you use half or even one third this amount and still have the cake turn out??? Would brown sugar work?

Delicious. Quick and easy to bake. Can serve as a snack or serve it with ice cream for dessert.
