Tomato-Basil Concasse

Ingredients

8 Ripe Italian plum tomatoes, diced

1 bunch, Fresh basil leaves, julienne

1 tablespoon Quality extra virgin olive oil

3 cloves Garlic, minced

Salt and white pepper to taste

Crostini

Preparation

Combine the tomatoes, basil, olive oil, garlic and salt and pepper. Set aside for at least 10 minutes to allow flavors to blend. Spoon atop crostini and serve.
