Forget Mexican take-out and enjoy Mexican food at home with this quick and easy taco recipe.

Ingredients

1 can Refried beans

Corn tortillas

1 1/2 lb Ground beef

1/2 Onion, chopped

1 Packet taco seasoning

Shredded lettuce

Chopped tomatoes

Grated Cheddar cheese

Sour cream

Salsa

Preparation

Fry ground beef with onions, pouring off excess fat. Stir in taco seasoning. Heat refried beans in a saucepan. Warm tortillas one at a time in a frying pan over medium heat, flipping them several times. Keep warm in a clean dish towel.


Fill tortillas with beef and/or beans, and let diners top the filling with lettuce, tomatoes, cheese, sour cream and salsa.

Cook's Notes

Tacos pack a lot of good food into those shells. Add Spanish rice and a salad of shredded cabbage and carrots with tangy vinaigrette, just like the restaurants do.
