Ham Pasta Primavera

Ingredients

3 tbsp Unsalted butter, divided
1 cup Pea pods
1/2 cup Shredded carrots
1 Small red pepper, cut into strips
3 Green onions, sliced
3/4 cup Evaporated skim milk
3 cups (12oz) ham, cut into cubes
10 oz Spagetti, hot cooked and drained
Fresh basil
Cilantro
Pepper, freshly ground

Preparation

Melt 1 Tbsp butter in medium suacepan over medium heat. Add vegetables; cook and stir until tender. Add remaining 2 Tbsp butter , milk and ham. Cook over medium-high heat 3 to 4 minutes, or until mixture thickens slightly. Serve over warm spagetti. Garnish with fresh basil, cilantro and freshly ground black pepper, if desired.

This pasta was great huge hit with both our boys and my husband, pretty quick and looks beautiful. I added a little fresh parmesan cheese to the pasta and a little on top after.
