Chicken Fingers

These can be made the night before and sent to school the following day.

Ingredients

3 Chicken breast halves, skinned and boned (about 3/4 pound)

1 Egg

Seasoned bread crumbs

1 tbsp. Butter, melted

1/2 tbsp. Fresh lemon juice

BBQ Sauce, catsup, or honey for dipping

Preparation

Pound chicken into thin cutlets between sheets of plastic wrap with a mallet.


In a bowl, beat the egg.


Dip the chicken into the egg and then into the bread crumbs.


Arrange the chicken cutlets into a non-stick baking dish and drizzle each one with melted butter and lemon juice.


Bake at 350 degrees for 20 minutes or until golden.


Slice the chicken into strips and serve with kids favorite sauce.

Cook's Notes

Children love pounding the chicken into thin cutlets. If you do not have a meat pounder, a hammer or a rolling pin will work. Even the youngest child can participate in this recipe!
