Cheese Herb Zucchini

What a great way to use up that zucchini from the garden. Kids will like this one too.

Ingredients

6 Medium zucchini

2 tbsp Melted butter

1 tsp Garlic salt

1 tsp Italian herbs

1 cup Sharp cheddar cheese, grated

Paprika

Preparation

Cut off the ends of zucchini, cut length wise. Parboil in boiling salted water, until crisp tender.

Drain. Turn into lightly buttered baking dish. Drizzle melted butter over zucchini. Sprinkle with garlic salt and herbs, top with grated cheese and paprika. Bake at 400 degrees F for 10 minutes or place under broiler 5 minutes, until cheese is melted and lightly brown.
