Tuna Noodle Casserole

Ingredients

2 tbsp Butter
1 cup Thinly sliced mushrooms
1/4 cup Finely chopped green onions
2 tbsp White flour
2 1/2 cups Low-fat milk
1 cup Grated Cheddar cheese
2 (6 oz) cans Tuna
2 cups Cooked egg noodles
1/4 cup Parsley, minced
1/2 cup Dry breadcrumbs

Preparation

Preheat oven to 375. Melt butter in saucepan over medium heat. Saute mushrooms and onions until just tender, about 5 minutes. Stir in flour and cook for 1 minute. Remove from heat and whisk in milk. Return pan to heat and cook, stirring, until it thickens and almost reaches a boil. Remove from heat and stir in cheese; stir until melted.


Drain tuna and break into flakes. Put in large bowl and add sauce, cooked noodles, parsley. Stir together and pour into greased baking dish. Sprinkle top with breadcrumbs. Bake at 375 until browned on top, about 30 minutes.

Cook's Notes

Serve your favorite green vegetables and/or a spinach salad with this dish. Crusty rolls and butter add some crunch.

This turned out great, even thought I made a few changes. I didn't have tuna, so I substituted chunks of spicy chicken thigh I had made the night before. I used white onions instead of green & left out the parsley. Also, used wheat flour instead of white & put more cheese in. Came out wonderfully! I will definitely be making this again. I liked it so much with chicken that I'll probably continue making it that way.

I'm going to try this recipe with Whole Wheat Flour instead of White, Almond Beverage in place of Milk and Goat Cheese in place of Cheddar and Whole Wheat Noodles; also, I will use Solid White Albacore Tuna. All of these substitutions should make it a lot healthier. I hope I don't ruin it. It sounds delicious. Thanks!!!
