Easy to make, easy to eat Italian Fritatta - can be served at breakfast, brunch or anytime you need a meal with an Italian flare. It's delcious. :-)

Ingredients

5 Eggs
1/2 cup Heavy Cream or Half/Half
1 tsp Olive Oil
1 Tomato (use large Vine-Ripened or Heirloom for best flavor - diced)
1 Onion (medium, diced)
1 clove Garlic (finely chopped)
1 lb Italian Sausage (with casing peeled off, torn apart)
2 tbsp Pesto (use fresh made or jar variety)
2 slices Bacon (uncooked, chopped)
5 Leaves Sweet or Thai Basil
1 tsp Salt
1 tsp Pepper
4 oz Goat Cheese
4 oz Gruyere Cheese (Shredded)

Preparation

1. Wisk together the eggs and cream until blended, set aside.

2. Preheat Oven to Broil setting and move rack to 2nd highest position - we'll be using this to cook the top of the Fritatta later.

3. Be sure to use a large frying pan that is oven safe for this.

4. To the large frying pan on medium heat, add the Olive oil, sausage and bacon and cook until lightly browned.

5. Next add the onions, garlic, tomato, salt and pepper and simmer for 10-15 minutes, or until the juice from the tomatoes has completely evaporated.

6. Then add the basil and pesto and combine together and heat for additional 1 minute.

7. Add the egg-cream mixture and reduce heat to medium-low and cook for approimately 5 minutes, or until the edges of the fritatta have turned slightly solid.

8. Sprinkle the goat cheese and Gruyere on top of the Fritatta and place under the broiler for about 5 minutes (or until the egg has set and the cheese has melted).

9. Garnish with more of the basil and serve.
