Ingredients

1 1/3 cups All-purpose flour
1/3 cup Yellow cornmeal
1 tablespoon Sugar
1 1/2 teaspoons Baking powder
1/4 teaspoon Salt
1/2 cup Plus 2 tablespoons skim milk
2 tablespoons Vegetable oil
1 Egg, beaten
Vegetable cooking spray

Preparation

Combine first 5 ingredients in a large bowl. Combine milk, oil, and egg; add to dry ingredients, stirring just until dry ingredients are moistened.

Drop batter by heaping tablespoons onto a baking sheet coated with cooking spray. Bake at 400 degrees for 12 minutes or until lightly browned. Cool on a wire rack. Yield: 1 dozen biscuits (about 96 calories each).

These biscuits are very good and truly easy to make. I guess, I took the idea of "heaping tablespoon" a bit too litterally. I got 8 biscuits out of a batch, instead of 12. LOL!

Some of the best cornmeal biscuits I have ever made...very light, and tasty! No rolling out and cutting is a definate bonus!
