Ingredients

2 cups Egg whites
1/2 cup Nonfat cottage cheese
1/2 cup Chopped tomatoes
1/2 cup Chopped sweet onion (purple)
1/2 cup Black beans, rinse, drain, mash
4 Small Ezekiel grain tortillas
Sea salt and pepper to taste
Cooking spray
Salsa

Preparation

*Preheat oven to 250 degrees. Place tortillas in oven

to warm.

*Whisk egg whites, cottage cheese, salt and pepper

*In med pan with oil, saute vegetables and beans

*Pour egg mixture over vegetables, cook till set.

*divide egg mix among tortillas. Roll into burrito.

*Add salsa
