Once chilled, arrange fruit to your liking. (mandarin oranges,
Pineapple, kiwi, raspberries, whatever. If you use pineapple, reserve 1/2 cup
The pineapple juice for glaze.
Glaze-
3 tablespoons Sugar
2 tsp Cornstarch
1/2 tsp Lemon juice
1/2 cup Pineapple juice
Bring glaze to a boil and continue to boil over medium heat 3 minutes,
Then put over fruit.
(I double the glaze recipe and make it really sour, I add the juice of
An entire lemon, as opposed to just 1/2 tsp.)
The glaze ingredients above are hardly sufficient to cover the whole
Thing and I think that the crust and middle part are too sweet, so I try
to balance it With a really tart glaze, but do what ya like!
