Ingredients
1/2 cup Chopped onion
3 cloves Garlic, minced
1 tablespoon Olive oil, divided
1 pint Shucked clams, drained & chopped
8 oz Clam juice
2 tablespoons Lemon juice
1/2 cup Chopped fresh parsley
1/2 teaspoon Dried marjoram leaves
1/8 teaspoon Ground black pepper
1/4 lb Portabello mushrooms, sliced
1/2 cup Dry white wine
2 teaspoons Cornstarch
Preparation
Place onion, garlic, and 1 teaspoon oil in large heavy saucepan. Stir in clams, clam juice, lemon juice, parsley, marjoram, and black pepper. Bring to a boil, reduce heat. Simmer, uncovered, 10 minutes or until clams are tender.
Combine mushrooms and remaining 2 teaspoons oil in small saucepan. Cook and stir until mushrooms are tender. Set aside.
Blend wine and cornstarch in small bowl until smooth. Add to clam mixture; mix well. simmer 1 minute or until thickened. Mix in mushrooms just before serving.
