Ingredients

1 cup Brown rice
2 1/2 cups Water
1/2 tsp Salt
Spinach
Mushrooms
Red Onion
Olive Oil
Tofu
Sesame or pumpkin seeds

Preparation

* Cook brown rice: Combine rice, water, salt in pan

and bring to boil.

* Reduce heat, cover and simmer 40 min.

* Saute on high 3-4 min: spinach, mushroom, * onion, olive oil,

* Drain and rinse tofu then crumble and add to pan

* Add seeds to pan

* Toss and heat through

* Sprinkle in turmeric and salt and pepper and stir

* Serve over brown rice
