Ingredients

1 Container (15oz) ricotta cheese
1/4 cup Grated Parmigiano-Reggiano cheese
Freshly ground black pepper
2 Large tomatoes, cored and cut
Into thin wedges
2 tbsp Extra virgin olive oil
1/2 tsp Salt
1 box (16oz) rotini
1/4 cup Pasta cooking water,
Reserved
2 tbsp Slivered basil leaves

Preparation

Whisk the ricotta and Parmigiano-Reggiano cheese and pepper in a large bowl. Combine the tomatoes, olive oil and salt in separate bowl. Cook the pasta according to package directions in plenty of boiling salted water until al dente or firm to the bite. Ladle out 1/4 cup pasta cooking water and stir into the ricotta mixture. Drain the pasta. Add the pasta to the ricotta cheese mixture along with the tomatoes and basil. Stir to blend and serve at once.
